Oolong tea is unique to China and Taiwan where most of the Oolong production takes place. Oolong tea comes in three degrees of fermentation: lightly fermented, full aroma, clarity, closer to green tea with lighter body, and golden green infusions. Moderately fermented Oolong has a brown color, a full "mature" flavor that appeals more to the sense of taste than that of smell, and a vaguely sweet aftertaste, with a red-orange color and a fruity aroma. Fully fermented Oolongs are more oxidized and closer in character to black tea with amber infusion colors and notes of fruit and roasted sugar.
